# Spiced Apple Cider Overnight Oats for Easy Fall Meal Prep

These spiced apple cider overnight oats are cosy, creamy, and ready for the whole week in about ten minutes of hands-on work. Real apple cider and warm spices make this the kind of fall breakfast you actually look forward to.

- **Prep time:** 10 mins
- **Cook time:** 0 mins
- **Serves:** 4 servings

## Ingredients

- 2 cups old fashioned rolled oats
- 1 and 1/2 cups fresh apple cider
- 1 cup plain Greek yogurt
- 1/2 cup whole milk or oat milk
- 2 tablespoons maple syrup
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 medium apple, peeled and finely diced
- 1 teaspoon pure vanilla extract
- Pinch of salt
- Granola and extra apple slices for topping

## Method

1. **Mix the Wet Ingredients.** In a large mixing bowl combine the apple cider, Greek yogurt, milk, maple syrup, and vanilla extract. Stir everything together until smooth and well combined.
2. **Add the Dry Ingredients and Spices.** Add the rolled oats, cinnamon, nutmeg, ginger, and a small pinch of salt to the bowl. Stir well so the spices are evenly distributed throughout the mixture.
3. **Fold in the Diced Apple.** Gently fold in the finely diced apple pieces. They soften slightly overnight and add little pockets of fruit throughout each jar.
4. **Divide Into Jars.** Divide the mixture evenly between four mason jars or airtight containers. Each jar should be about three quarters full to leave room for toppings in the morning.
5. **Refrigerate Overnight.** Seal the jars and place them in the refrigerator for at least 6 hours or overnight. The oats will absorb the liquid and thicken into a creamy, spoonable texture.
6. **Stir and Top Before Serving.** When ready to eat, give the jar a good stir from the bottom up. If the oats are too thick, add a splash of milk or cider. Top with granola, fresh apple slices, and a small drizzle of honey if you like.
