Mix the Wet Ingredients
In a large mixing bowl combine the apple cider, Greek yogurt, milk, maple syrup, and vanilla extract. Stir everything together until smooth and well combined.
Add the Dry Ingredients and Spices
Add the rolled oats, cinnamon, nutmeg, ginger, and a small pinch of salt to the bowl. Stir well so the spices are evenly distributed throughout the mixture.
Fold in the Diced Apple
Gently fold in the finely diced apple pieces. They soften slightly overnight and add little pockets of fruit throughout each jar.
Divide Into Jars
Divide the mixture evenly between four mason jars or airtight containers. Each jar should be about three quarters full to leave room for toppings in the morning.
Refrigerate Overnight
Seal the jars and place them in the refrigerator for at least 6 hours or overnight. The oats will absorb the liquid and thicken into a creamy, spoonable texture.
