Ingredients

Step-by-Step Method

1

Make the Marinade

In a large bowl, combine the Greek yogurt, minced garlic, olive oil, smoked paprika, cumin, oregano, onion powder, salt, black pepper and lemon juice. Stir everything together until it is a smooth, evenly coloured paste.

2

Coat the Chicken

Pat the chicken thighs dry with paper towels, then add them to the bowl. Use your hands or a spoon to coat every piece thoroughly with the yogurt marinade, getting under the skin where you can. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.

3

Preheat Your Oven

When you are ready to cook, preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Take the chicken out of the fridge about 15 minutes before cooking so it is not ice cold going into the pan.

4

Sear the Chicken

Heat a large oven safe skillet or cast iron pan over medium high heat. Place the chicken thighs skin side down without wiping off the marinade. Sear for 4 to 5 minutes without moving them until the bottom is deep golden and the marinade has formed a crust.

5

Finish in the Oven

Flip the chicken thighs over and transfer the entire pan into the preheated oven. Roast for 18 to 20 minutes until the internal temperature reads 165 degrees Fahrenheit on a meat thermometer.

6

Rest and Serve

Remove the pan from the oven and let the chicken rest for 5 minutes before serving. Scatter fresh parsley over the top and serve with your choice of sides.

Frequently Asked Questions

Can I use flavoured Greek yogurt for the marinade?

Stick to plain unsweetened Greek yogurt. Flavoured versions often have added sugars and fruit bits that will burn quickly in the pan and change the taste in a way you probably will not enjoy.

How long can I leave chicken in the yogurt marinade?

Up to 24 hours in the fridge is the sweet spot. Beyond that the texture of the chicken can start to get a bit too soft, especially with thinner cuts like breasts.

Is this recipe actually high in protein?

Yes. A typical serving of chicken thighs already gives you around 25 to 30 grams of protein. The Greek yogurt in the marinade adds a few more grams on top of that, making this a solid high protein meal without any supplements or powders.

Can I bake this instead of pan frying?

Absolutely. A 425 degree Fahrenheit oven for 25 to 30 minutes works well. Place the chicken on a wire rack over a baking sheet so air can circulate and the bottom does not get soggy.
