# 20-Minute Sheet Pan Chicken Fajitas

Juicy chicken strips with caramelized peppers and onions, seasoned with homemade fajita spice and roasted on one pan in just 20 minutes — easy weeknight dinner with almost no cleanup.

- **Prep time:** 10 mins
- **Cook time:** 20 mins
- **Serves:** 4

## Ingredients

- 1 lb (450g) boneless skinless chicken breasts, sliced into ¼-inch strips
- 3 mixed bell peppers (red, yellow, green), deseeded and sliced
- 1 large red onion, sliced into thin half-moons
- 2 tbsp olive oil
- 1½ tsp chili powder
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
- ½ tsp fine salt
- ¼ tsp black pepper
- Juice of 1 lime, plus extra wedges to serve
- Warm flour or corn tortillas, to serve

## Method

1. **Preheat the oven.** Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet (at least 18x13 inches) with foil or parchment paper for easy cleanup.
2. **Mix the seasoning.** In a small bowl stir together the chili powder, cumin, garlic powder, smoked paprika, onion powder, salt, and pepper.
3. **Season the chicken and vegetables.** Place the sliced chicken, bell peppers, and onion on the prepared sheet pan. Drizzle with olive oil, sprinkle the seasoning blend over everything, and toss well until every piece is coated. Spread into a single, even layer — do not pile or overlap.
4. **Roast.** Roast for 18–20 minutes, until the chicken reaches 165°F (74°C) on a meat thermometer and the pepper edges are lightly caramelized. For extra char, switch to broil for the final 2 minutes.
5. **Finish and serve.** Squeeze the lime juice over the pan, give everything a quick toss, and serve straight from the pan with warm tortillas and your favourite toppings — sour cream, guacamole, salsa, or shredded cheese.

## Frequently asked questions

### Can I use chicken thighs instead of breasts?

Yes — boneless, skinless thighs stay even juicier. Slice them thinly just like breasts and cook for the same time. Check that the internal temperature reaches 165°F (74°C).

### My peppers are going soggy. What went wrong?

The pan was overcrowded. Use the largest rimmed baking sheet you have — at minimum 18×13 inches — and make sure the pieces aren’t piled on top of each other. If in doubt, split across two pans.

### Can I make this ahead of time?

The cooked filling keeps in the fridge for 4 days, so yes — roast a double batch on Sunday and reheat portions through the week. The Chicken Rice Meal Prep guide on the site has more tips on building a chicken-based weekly plan.

### What tortillas work best?

Medium flour tortillas (8-inch) are the classic choice and hold up to the filling without splitting. Corn tortillas are gluten-free and have more flavour; warm them in a dry skillet or directly over a gas burner for 20–30 seconds per side.

### How do I stop the chicken from drying out?

Slice it thin — about ¼-inch strips — and don’t overbake. Pull the pan at 18 minutes and check with a meat thermometer. Once it hits 165°F, it’s done. Resting for 2 minutes before serving also helps the juices redistribute.

### Is this recipe gluten-free?

The filling itself is naturally gluten-free. Just use corn tortillas and double-check your spice blend for any added starch.
