# Sheet Pan Garlic Butter Salmon & Asparagus: A Real Weeknight Hero

This sheet pan garlic butter salmon and asparagus is the weeknight dinner I reach for when I need something fast, satisfying and easy to clean up. Everything roasts together on one tray in about 30 minutes and the garlic butter makes it taste like you really tried.

- **Prep time:** 10 mins
- **Cook time:** 18 mins
- **Serves:** 4 servings
- **Energy:** 420 kcal

## Ingredients

- 4 salmon fillets (about 6 oz each, skin on)
- 1 bunch asparagus (about 1 lb), tough ends trimmed
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped, for serving
- Lemon slices for serving

## Method

1. **Preheat the oven.** Heat your oven to 400 F (200 C). Line a large rimmed sheet pan with foil and give it a light drizzle of olive oil so nothing sticks.
2. **Make the garlic butter.** In a small bowl mix the melted butter, minced garlic, lemon zest, lemon juice, Italian seasoning and smoked paprika together. Give it a good stir so everything is combined.
3. **Arrange the asparagus.** Spread the trimmed asparagus spears on one side of the prepared sheet pan. Drizzle over about a third of the garlic butter, season with salt and pepper, and toss to coat. Spread them in a single layer.
4. **Add the salmon.** Place the salmon fillets skin side down on the other side of the pan, leaving a little space between each one. Spoon the remaining garlic butter generously over the top of each fillet. Season with salt and black pepper.
5. **Roast until cooked through.** Slide the pan into the middle rack of your preheated oven and roast for 14 to 18 minutes. Thinner fillets will be done closer to 12 to 14 minutes. The salmon is ready when it flakes easily with a fork and the asparagus tips are lightly golden.
6. **Finish and serve.** Remove the pan from the oven and scatter fresh chopped parsley over everything. Add lemon slices on the side and serve straight from the pan while it is hot.

## Frequently asked questions

### Can I use frozen salmon fillets?

Yes, but make sure they are fully thawed and dried well before going on the pan. Frozen salmon holds a lot of water and if it is not properly defrosted you will end up with a watery tray and pale, soft fish rather than nicely roasted pieces.

### How do I know when the salmon is cooked through?

The flesh will turn from translucent to opaque and it will flake easily when you press it gently with a fork. If you have a thermometer, 125 to 130 F in the thickest part gives you a moist slightly medium centre, while 145 F is fully cooked through according to food safety guidelines.

### Can I prep this ahead of time?

You can mix the garlic butter and trim the asparagus a few hours ahead and keep everything in the fridge separately. I would not assemble the whole tray more than an hour before cooking though, as the salt in the butter will start to draw moisture out of the fish.

### My asparagus always burns before the salmon is done. What am I doing wrong?

Most likely the spears are too thin or they are placed too close to the top heating element. Try using thicker spears, toss them well in the butter so they have a protective coating, and position your oven rack in the middle rather than near the top.
