Cooking times can vary by equipment and ingredient size. Use the visual cues in the instructions and adjust seasoning to taste.

Method

  1. Prep Your Baking Sheet

Line a large rimmed baking sheet or a 9x13 inch pan with parchment paper, leaving a little overhang on the sides so you can lift the bark out easily once it sets. Set it aside on a flat surface.

  2. Melt the Dark Chocolate

Place the chopped dark chocolate and coconut oil in a heatproof bowl. Microwave in 30-second bursts, stirring well between each one, until fully melted and smooth. This usually takes about 2 to 3 minutes total. Alternatively melt it over a pot of barely simmering water, making sure the bowl does not touch the water. Stir in the vanilla extract.

  3. Spread the Chocolate Base

Pour the melted chocolate onto the prepared parchment and use a spatula to spread it into an even layer roughly 1/4 inch thick. Do not make it too thin or it will crack unevenly when you break it later.

  4. Swirl in the Tahini

Drop spoonfuls of tahini across the surface of the warm chocolate. Use a skewer, toothpick, or the tip of a knife to gently swirl the tahini through the chocolate in loose figure-eight motions. You want visible ribbons of tahini, not a fully blended layer.

  5. Add the Pistachios

Scatter the roughly chopped roasted pistachios evenly over the top. Press them down very gently with your fingers so they stick into the chocolate surface and do not fall off when the bark is broken into pieces.

  6. Finish With Salt and Optional Toppings

Sprinkle the flaky sea salt evenly over everything. If you are using the optional white chocolate drizzle, melt it separately and use a fork or spoon to drizzle thin lines back and forth across the bark. Scatter dried rose petals on now if using.

  7. Chill Until Set

Leave the bark at room temperature for 10 minutes, then transfer the whole tray to the fridge. Let it chill for at least 45 minutes to an hour until completely firm and set all the way through.

  8. Break and Serve

Lift the bark out of the tray using the parchment overhang. Break it into rough uneven pieces by hand or use a sharp knife. Serve immediately or store in an airtight container in the fridge until ready to eat.
